This is one of those dinners I make when I want something really good but can't be bothered standing at the stove, you just put it all in the pot and leave it to do its thing.
Ingredients
- 1 large chicken
- 3 cups water
- 1 cup soy sauce
- 1/2 cup apple cider vinegar
- a bay leaf
- a few peppercorns
- a good knob of butter for some fats
Method
Put everything in a big pot with the lid on and let it simmer for 3 hours, then take the lid off for the last 30 minutes so the sauce cooks down.
I serve it on rice with a drizzle of sesame oil, fried onions, chilli oil and fresh chives cut over the top.
Why slow cooked food is good for your tummy
Slow cooking is so gentle. The meat falls off the bone and all the goodness from the skin and bones ends up in the sauce, so it's easy to digest, and when my tummy is happy my skin always shows it.
For me eating well and looking after my skin go hand in hand. I feed it from the inside with meals like this and then use my Earth Tallow Balm on the outside every day. If you're not sure which product suits you, have a look at which DAEAR product is right for me.
If you make it, email me and tell me how it went, I love hearing what you're all cooking.
